When I saw Jamie Oliver making this delicious Banana Banoffee Pie on his 30 minute meals I knew I had to try it as i LOVE anything with bananas in it! It is so easy to make and you REALLY can do it in 30 minutes. Here goes….
1 store bought pie crust
4 tbsp of castor sugar
300ml whipping cream
1tbsp camp coffee
100g block of dark chocolate
If you are buying a pre made pie crust from the shops then don’t forget to bake it for 10 mins before you put your filling in. 160 degrees fan forced should do it.
Blitz two of the bananas with the milk until well combined and smooth
In a pan over high heat melt the castor sugar. Don’t stir it just gently tilt as it melts to a dark caramel colour
Add the banana and milk mixture to the toffee, stirring until the toffee melts back into the bananas
Pour into the pie case and freeze for 20 minutes
Whip the cream and then fold in the camp coffee so it leaves pretty swirls in the cream (if you don’t have camp coffee i just used espresso coffee made with my nespresso machine and that worked well)
Slice the remaining 2 bananas and arrange them over the pie filling, then spoon the cream over the top
Place the chocolate bar on the benchtop, smooth side up. Scrape a sharp knife on a 45 degree angle across the chocolate, making chocolate curls. Arrange over the top of the cream
Unfortunately I accidentally got the wrong cream, so it didn’t whip as well as it should of but normally the pie would be a lot bigger on top with the cream rising high!
